Asti Spumante "La Selvatica" from the Piedmontese winery La Caudrina is the most classic and traditional interpretation of Moscato Bianco. This ancient grape, widespread in almost all Mediterranean countries and in the wine regions of Europe in many different clones, has been cultivated for centuries on the hills of Asti. Traditionally, Moscato grapes are used to produce sweet sparkling wines using the Martinotti or Charmat method. These wines have a low alcohol content and a soft, floral and fruity taste, finding a perfect taste balance between the sweetness of the residual sugar and the lively final freshness, also supported by a light and delicate perlage.

The Asti Spumante "La Selvatica" is born in a historic estate in the area. The Dogliotti family, owners of the La Caudrina winery, has been cultivating vineyards in the wonderful territory of Asti for three generations. About twenty hectares are located on the Galeisa hill, which enjoys excellent sunny and well-ventilated exposures. The predominantly calcareous soils are particularly suitable for Moscato Bianco, which in these conditions expresses grapes of great aromatic finesse. Another 10 hectares are cultivated in the Nizza Monferrato area. The symbol wine of the winery is indeed the Moscato d'Asti, which, true to tradition, expresses all the aromatic pleasantness, the fragrant and soft fruit ripeness, and the freshness of the Moscato grape.

“La Selvatica” from the La Caudrina winery is an excellent version of Asti Spumante, which renews the great tradition in the name of the search for quality and territorial typicity. After the first vinification, the base wine is transferred to an autoclave for the sparkling process and the second fermentation according to the Martinotti or Charmat method. The fermentation is interrupted by lowering the temperature when the wine reaches an alcohol content of 7.0 vol%, leaving a residual sugar. The color is a rather deep straw yellow, crossed by a fine and continuous perlage. The bouquet expresses aromas of white flowers, orange blossom, citrus aromas, white peach, pear, and nuances of aromatic herbs. The sip is elegant, dynamic, and lively, with a rich, soft, creamy fruit and an intensely fresh finish. It is one of the classics of Italian tradition, the most widespread dessert sparkling wine, which has always accompanied festive moments.
