The “Paòne” is a very interesting Fiano, which deviates from the more canonical and predictable aromas of the type. The Cantina del Barone is indeed a very small production reality (each year, fewer than 20,000 bottles are produced) that focuses exclusively on the Fiano grape, wanting to represent its characteristics more linked to the terroir of origin. We are therefore faced with an unpublished and original bottle, in which the vegetal and smoky stamp tells us of a truly unique tasting experience and typical.
This “Paòne” is a pure Fiano, a white grape variety that is widely cultivated within the Campania region. The Cantina del Barone grows it using the guyot system within parcels of volcanic origin, characterized by a strong presence of skeleton and minerals. The bunches obtained from manual harvesting are pressed whole, and fermentation starts spontaneously in steel, thanks to the presence of indigenous yeasts. The aging then takes place for several months always in steel, until the wine is deemed ready to be bottled.
The “Paòne” in the glass develops with a straw yellow color, endowed with a beautiful intensity that captures the eye. The nose is interesting, expressing citrus and spicy notes, from which hints of aromatic herbs and touches of hay emerge. Easy to drink and pleasant, on the palate it enters with a light and fine structure, which increases its smoothness; the taste is fresh, accompanied by a dry flavor and slightly smoky on the finish. A wine that, for the Cantina del Barone, embodies the tradition and memory of the owning family, the Sarno, whose label features a peacock (from which the chosen name “Paòne” comes), an animal symbol of elegance and nobility that still roams undisturbed within the estate's boundaries.
