The Colfondo of Ca' Dei Zago represents a splendid example of Prosecco made the traditional way, that is with the so-called ancestral method which involves refermentation in the bottle. An ancient family tradition of the Zago family, which as early as 1924 saw Christian's great-grandfather, the current manager of the winery, produce liquids that not only came from completely healthy and untreated grapes, but also without undergoing filtration or stabilization. The belief has remained the same since then, although it has been enriched by the skills acquired by Christian during his journey in New Zealand, with the strict application of biodynamic agriculture in the vineyard. Rather old vines of about 50-60 years complete an idyllic picture, a true enclave of Colfondo that gives life every year to bottles that stand out for their drinkability and extreme adherence to the territory.

The Ca Del Zago Colfondo presents itself in the glass with a fine bubble and a slightly hazy straw color, due to the presence of yeasts. The nose is a bucolic portrait, where notes of cut grass, citrus, and crunchy fruit initially peek through, giving way to a refined floral note.
