The Gin Nobile Kobiashvili is a quality premium gin produced in Trieste by Giorgi Kobiashvili, a Georgian entrepreneur who drew inspiration from the ancient recipes of his homeland. He learned the art of herbal infusion from his great-grandmother Verichka, who used to take little Giorgi with her to gather wild herbs on the heights of the Kakheti region, a historical province of eastern Georgia from which the Kobiashvili family originates. Giorgi treasured what he learned, deciding to launch the Nobile Kobiashvili brand in 2021 to pay homage to the traditions and culture of his homeland.
The production of Nobile Kobiashvili Gin begins with a careful selection of botanicals from the Georgian heights. Among the ingredients used are helichrysum, angelica root, dwarf pine, rosemary, green cardamom, iris, lemon, thyme, sweet orange, elderberry, anise, and of course juniper berries, essential ingredients for any gin. All these botanicals are macerated in a combination of alcohol from grain and wine brandy, and then distilled. At this point, the distillate is placed to mature in Georgian amphorae over 150 years old before the final bottling, which takes place in a peculiar terracotta bottle on which the noble coat of arms of the Kobiashvili family is printed.
The Gin Nobile Kobiashvili has a transparent and crystalline appearance. The nose reveals spicy aromas of cardamom and balsamic notes of juniper and dwarf pine, surrounded by precious floral hints of elderflower. On the palate, it is soft yet pungent, with a balanced finish where the spicy and balsamic sensations perceived on the nose re-emerge. A perfect gin for making quality Gin Tonics, perhaps garnished with a sprig of rosemary.
