L’Indigeno from the Ancarani winery is a sparkling white wine delicate and very drinkable. The winery, managed by Rita Babini and Claudio Ancarani, is located in Oriolo dei Fichi, in the province of Faenza. It has always worked with great attention to the concept of environmental sustainability, avoiding the use of chemical and systemic additives and trying to limit the use of copper and sulfur. The grapes come from gentle hills at about 75 meters above sea level and facing west, cultivated using the traditional guyot method on soils characterized by the presence of red clay and silt.
The winemaking process begins, after the grapes have been hand-picked at the end of August, with the destemming and gentle crushing of the bunches. Subsequently, the must is fermented using exclusively indigenous yeasts and remains in aging on its own yeasts in cement tanks for about 2 months. This step allows the evolution of the structure and the achievement of a natural clarification without the need for filtration. The wine is then added with the must taken during the harvest to carry out the refermentation in the bottle with foam capture, it is aged on the lees, before being marketed.
“Indigeno” Ancarani presents itself with a pale straw yellow color, slightly cloudy and veiled as per tradition. On the nose, it is rustic, with hints of yellow fruit, wild herbs, iodized notes, and bread crust. On the palate, it is lively, energetic, with pleasant freshness and minerality that make it refreshing. It is an artisanal white, a pure and sincere expression, refermented in the bottle without disgorgement as per ancestral method.
