It presents itself with a dark and impenetrable ruby color and expresses an intense and enveloping bouquet on the nose, with aromas of well-ripened dark fruit, tobacco, cocoa, and licorice, while on the palate it is vigorous and energetic, with a dense tannic structure and a spicy finish.
The Pignolo by Dario Coos is a Friulian red with great personality and significant structure. It is a grape variety cultivated for centuries in the Colli Orientali, where it has found the right climate and soils to produce a intense, complex wine, which also has excellent aging potential with interesting tertiary developments. This grape variety is found almost exclusively in Friuli Venezia Giulia, offering a label with a typically territorial flavor. Due to its richness and gustatory depth, it is a wine that shines when paired with flavorful and important dishes, such as braised meats, roasts of red meats, or game.
The Pignolo is a great red from the Colli Orientali, a wine of tradition, that Dario Coos continues to produce following the oldest customs of the territory. In his estate in Nimis, he has indeed decided to cultivate the main indigenous Friulian grape varieties, to produce wines capable of telling the story and traditions of his land. The 4 hectares of his estate are cultivated on beautifully exposed terraces characterized of prized soils, consisting of sedimentary layers of sandstone and limestone, very draining and rich in mineral substances. Its labels are a perfect expression of the terroir of origin, a synthesis of climate, soils, traditions, and the tireless work of man. Wines that can express directly and immediately the character of the Colli Orientali with proud straightforwardness and a sense of belonging to the culture of their land.
The Pignolo from Dario Coos's estate is born from a fermentation process of the grapes without pressing, which lasts for about 20 days. After the racking, the Pignolo matures for several months in French oak barrels. In the glass, it presents itself with a very intense ruby red color. On the nose, it opens with dense and complex aromas of small dark berries, ripe red fruit, notes of bitter cocoa, tobacco, licorice root, and spices. The sip is long and deep, with a tannic texture and a mid-palate dense and aromatically rich. The finish is very long and persistent, with a closure that returns to spicy sensations.
