The Pinot Bianco "Quintessenz" from Cantina di Caldaro is a refined and elegant wine. A white that well expresses the best qualities of this delicate French grape variety, which has found a second home in Alto Adige. It is a wine that plays its best cards on the finesse of the aromas, never excessive or exuberant, but always very harmonious and subtle. Thanks to the cool climate of the Caldaro area, it always maintains a perfect balance between fruit and freshness, making it particularly versatile for food pairings.
The "Quintessenz" is a Pinot Bianco that is part of the high-end line of Cantina di Caldaro, one of the most important and representative realities of the South Tyrolean territory. It manages a total of 471 hectares, which belong to about 650 member suppliers. The Pinot Bianco vineyards are cultivated in the St. Nikolaus area, in a high hillside area with east-facing exposures, at an altitude ranging between 550 and 600 meters above sea level. The soils are predominantly calcareous, with the presence of dolomitic rocks and glacial origin cones.of glacial origin. The vines have an average age of about 15 years and are trained in Guyot, with a yield of less than 45 quintals per hectare. After the harvest, the whole grapes are softly pressed. The free-run must is subjected to spontaneous fermentation with indigenous yeasts in oak tonneaux and large barrels. The wine matures in wood on the fine lees with periodic bâtonnage for about 10 months, before being bottled.
The "Quintessenz" wine is the perfect combination of a great and noble grape variety and a terroir very suited for the production of great whites. In the glass, it presents a bright straw-yellow color with greenish reflections. The aromatic profile is elegant and delicate, with scents of wildflowers, chamomile, white fruit, cantaloupe, and mineral sensations. The sip is soft and creamy, with great expressive harmony, featuring refined fruit tones and balanced freshness. The finish is long, with pleasantly savory notes.
