The Prosecco di Valdobbiadene is one of the most appreciated and well-known products in the world. It is the symbol of Italian sparkling wine production thanks to its unique characteristics that make it pleasant, easy to drink and at the same time of excellent quality. It is produced in the Veneto region from Glera grapes using the Charmat or Martinotti method, which involves refermentation in hermetically sealed steel containers. The production area is limited to 15 municipalities in the province of Treviso, including the municipalities of the same name and Conegliano, which have distinguished themselves as extraordinarily suitable areas for the production of grapes characterised by expressive aromaticity and great freshness. The Valdobbiadene Prosecco Territory

The Valdobbiadene Prosecco territory stretches across the hills of the Veneto region, located just 50 kilometres from Venice and in the shadow of the Dolomites, just over 100 kilometres away. The valleys wind their way through an enchanting natural amphitheatre, in a land of ancient villages, centuries-old castles and great monuments. Culture and tradition can be felt in the fresh, clean breeze that blows all year round on the gentle slopes and which has seen the succession of great families and civilisations. It is a pleasant experience to wander in search of the centuries-old human traces that have attracted a growing number of tourists in recent years.

It is precisely in this fascinating area that one of the oldest winemaking traditions was born. The culture of winemaking has been rooted in these lands for centuries, to the point that one of the most famous and renowned schools of oenology, the G.B. Cerletti Institute, was founded in Conegliano in 1876. It is still one of the most advanced centres for scientific research on vine cultivation. For centuries, the vineyards have witnessed the continuous change of seasons, giving birth to what can be considered today as the most famous sparkling wine in the world. With such a compelling history, it is not surprising that the locals are fiercely proud of their land, and in recent years have been campaigning for recognition as a UNESCO World Heritage Site.

The origin of the soils is among the oldest in Italy and dates back to the rising of the seabed. The hills were then modelled by the displacement of the Dolomite glaciers, which contributed to moving different types of sediment into the valley. The conformation is therefore mixed, and where the ice has not arrived there is a large accumulation of organic substance, sandstone and marl of marine origin. On the other side are clay and limestone brought and deposited by the rivers created by the melting of the glaciers. The hills have different conformations, some softer, others steeper, giving the Veneto area different microclimates from which the vine is able to offer expressions of various types.

Prosecco Valdobbiadene is mainly obtained from the Glera vine, a white grape with a golden berry grown mainly in the Veneto region. It has soft colours, somewhere between yellow and greenish tones, and in exceptional cases, it reaches more intense shades of yellow.

Delicate, persistent, and elegant, the sparkle is always well-integrated and fundamental in providing vivacity. The aromas are always subtle and gentle, varying according to the type of soil and producer. Freshness is the basis of the aromatic bouquet: young fruit, white and yellow wild flowers and herbaceous notes are the most common scents which, together with the typically almond and citrus aftertaste, create a unique and typical olfactory profile. The taste is always light and very drinkable, and always maintains a vibrant and energetic freshness, which features a pleasant sapidity, a more or less marked minerality and a delicious freshness. 

Prosecco di Valdobbiadene wine is a perfect choice for accompanying aperitifs, although its characteristics make it versatile and ideal for pairing with starters or simple first courses. The best and most elegant versions, often recognisable by the Valdobbiadene Prosecco Superiore label, can also be enjoyed throughout the entire meal as an impeccable companion to elegant convivial moments with fish or vegetables. In this case the Brut type, characterised by a very low residual sugar, is optimal because it is drier and more versatile. The more famous and popular Extra Dry or Dry versions, on the other hand, are characterised by a pleasant residual sugar that makes them very enjoyable to drink and can also be paired with pastries and fruit-based desserts.
