Prohibido's Ron 'Solera 12' revives a clandestine recipe from the 18th century, when Chinguirito, as Mexican rum was called, was banned by King Philip V to protect Spanish spirits. Aged for twelve years using the Solera method in ex-wine barrels, this rum has a distinctive feature: the addition of sweet wine, which creates a fascinating sweet-bitter contrast on the palate.
