The mild and very breezy climate and the calcareous, rather poor, and stony soils are ideal for obtaining a great Sangiovese. Harvest takes place between the end of September and the beginning of October, and the best bunches are sent for fermentation, which occurs in temperature-controlled stainless steel tanks with skin maceration. Before being put on the market, the wine matures for 7 months in French oak barrels and completes the aging with 7 months in the bottle.
