AKA is an innovative and unique Italian producer specializing in the creation of refined kombucha crafted using the Classic Method, the same technique used in the production of Champagne and many other fine sparkling wines around the world. The creator of this new category of beverage, a Sur Lies Tea, is Domenico Carella, an entrepreneur and consultant in the field of high-quality beverages. The idea originated from numerous requests by chefs and restaurateurs seeking an elegant product that did not contain alcohol. Thus, in 2022, Domenico, with the support of his wife Elisa Isidora Manservisi, founded AKA, an acronym for “Artistic Kombucha Alternative.” The term “artistic” refers to the artistic value of these products, with labels illustrated by various artists each year. For production, Domenico collaborates with a master brewers’ facility in Piacenza.
For its kombucha, AKA uses a wide range of infusions, including Lapsang Souchong tea, Jasmine tea, fig leaf infusion, Genmaicha tea, green tea, and water kefir. These infusions are combined with raw cane sugar and the so-called “scoby,” a symbiotic culture of yeast and bacteria that facilitates the initial fermentation of the kombucha. For the second fermentation in the bottle, conducted using the prestigious Classic Method, Champagne yeasts are employed, which impart additional character and elegance to the kombucha.
