La Fabbrica di San Martino is situated in the Tuscan hills north-west of Lucca, just five kilometres from the historic centre, in the heart of the Lucca Hills and along the famous Wine and Oil Route. The winery is housed in a farmhouse built in 1751, meticulously restored, which overlooks a breathtaking panorama to the south: the medieval walls of Lucca, the plain, the River Serchio and the surrounding mountains form the backdrop to a property steeped in centuries of rural history. Floors, ceilings, beams, stucco work and original furnishings have been carefully restored to recreate the refined atmosphere of an era when beauty was part of everyday life. This is not just a simple agritourism property, but a place where time seems to have stood still.
The production approach at Fabbrica di San Martino is deeply rooted in biodynamics, based on a constant dialogue between man, the land and the astral cycles. No chemical fertilisers are used in the vineyard: it is the vines themselves that dictate the rhythms and guide agronomic decisions, based on careful observation of the plants and the soil. Biodynamic preparations such as horn manure 500 and horn silica 501 are prepared directly in the winery. Winter green manure completes the regenerative cycle, restoring to the soil the vitality necessary to grow quality grapes of local varieties such as Sangiovese. In the winery, the philosophy remains the same: only indigenous yeasts, no additives, no filtration. Fermentation is spontaneous and sulphur dioxide levels are kept to a minimum.
